This is like a quiche without the eggs. Sort of. Good enough for an entree, but can be relegated to side dish status, too.
You need 1 large tomato, one pre-made pie crust in a tin pan, a green pepper, an onion, some mushrooms, a cup of mayonaise, a cup of shredded mozzarella cheese, some parmesan cheese, some oregano, basil, parsley, a few cloves of garlic, salt and pepper.
First: preheat your damn oven to 375F. To make, get your pie crust. Slice the tomato up, and set them on a paper towel to drain a bit. Cut the green pepper up into strips or rings, and then slice up the mushrooms, and then the garlic and onion, and mix them all together. Layer the tomato slices on the crust, then dump the pepper/mushroom/etc. mix on top of that. Sprinkle some of the herbs on top of that, then get your mayonaise and cheeses. Mix them up.
Now! Spread it all over the top of the pie, add some salt and pepper and some more herbs. Stick it in the oven for about 30 minutes. The cheeses/mayo should come out browned on parts and golden brown on the others, and white everywhere else (read: it won't be evenly browned on top, But That's Okay). Serve with a plate, fork and two napkins (one for your lap, one for your mouth). Nice red wine or an ale goes well with this.
Substitutions: add some sausage into the mix, it might taste good. Maybe half a pound or so, and don't get those cheap Jimmy Dean sausages. Use the nice fat Italian ones. Maybe substituing ricotta cheese for the mayo would work. Make a real pie crust instead of buying one.
